What is a paleta?

In Mexico, paletas are traditionally sold by paleteros from carts and small shops, made in small batches with real fruit or dairy rather than flavored syrup and water. The name itself, "LA PALETA by Luna," honors that heritage, alongside the girl whose kitchen-table verdict started the brand: "Dad, you have to sell these." A paleta isn't a diet trick; it's a genuinely different way of making a frozen treat, built around whole ingredients rather than flavored ice.
